Soaked Crackers

Since we gave up conventionally prepared grains several months ago, I've been experimenting with and tweaking various recipes for our favorite grain products.

I've learned to make sourdough bread, soaked pancakes and waffles and even soaked tortillas.

One of the grain products I miss most is crackers.  I like to dip crackers in my chili and soups.  My children like them to snack on, as well.  Knowing what I know about boxed grocery store salty snacks, there was no way I would purchase crackers ever again.  Fortunately that doesn't mean we have to be sad and cracker-less.  <-- God forbid, right?

What You'll Need:


STEPS:

1.  Preheat oven to 375 degrees.
2.  Using a pizza cutter, cut the tortillas into cracker-sized pieces.  I make mine into triangles.
3.  Bake for 8 minutes, or until crunchy.
4.  That's it.  Seriously.  Easy, right?

    Great idea.

    Never thought that just plain saltines would be bad for you, but you made me go and look at the box, to the garbage it went.

    1. The flour used to make the tortillas (and thus, the crackers) is soaked in an acidic medium (I use whey from raw cow's milk) to neutralize phytic acid and increase digestibility.

  9. I was thinking of trying this when I was reading the soaked tortilla recipe the other day! I have tried to make soaked crackers before without success-- or praise from my family.
    One thing that did work when I tried another recipe was the addition of a mixed spice blend--it made them taste like a popular baked not fried cracker! I wonder if it would work with these.....
