Real Food Diary – What I Ate Today

It’s time for the third entry in my real food diary.

Guess what, you guys? I still love cheese.

Real Food Diary

Breakfast

2  eggs scrambled in butter and topped with goat cheese
1 cup of coffee with coconut sugar, raw milk and coconut oil

Snack

Several cubes of Havarti cheese and an apple
1 cup of coffee with coconut sugar and raw milk

Lunch

(Leftovers)
Pastured chicken enchilada filling (no tortilla) with cheddar

I omit the chicken broth and the flour in the recipe I linked. I find the juices from the chicken is plenty of liquid to keep the enchilada filling from being too dry. If it gets too soupy, I’ll add arrowroot powder to thicken it.

Dinner

Sweet Potato Pancakes
Raw milk

Snack

1 chocolate chip cookie (made with coconut flour)
4 oz iced tea, raw honey sweetened
