Sweet Potato Frittata – An Easy Dinner Recipe
I love sweet potatoes, but I don’t only enjoy them baked. Sweet potatoes are pretty versatile, which is why they’re so yummy in this sweet potato frittata recipe.
Sweet potatoes pack a big nutritional punch. They contain ample amounts of Vitamins A, B, C, and the mineral potassium. (We all need more potassium from our diets.)
Even though sweet potatoes have a sweet flavor, they’re actually lower on the glycemic index than regular white potatoes. That’s why I always look for new ways to get sweet potatoes into my family’s diet.
If you’ve already discovered the awesomeness of sweet potatoes you know why my family loves them. And, like I’ve already said, there are so many make sweet potatoes, but there’s nothing wrong with adding one more yummy sweet potato recipe to your repertoire.
So, here’s a new sweet potato recipe for you to try!
Sweet Potato Frittata Recipe Made Two Ways
When I first came up with this recipe, I wanted a recipe that made sweet potatoes the main part of the meal instead giving them side-dish status. I created the recipe to be made with baked, mashed sweet potatoes.
It’s completely delicious that way and turns a beautiful orange color because the sweet potato is distributed throughout the dish and part of every single bite.
And then one busy day sweet potato frittata was on the meal plan but I wasn’t able to get started on dinner as early as I’d planned. Life happens, right?
I needed to get the sweet potatoes cooked faster than the 40-45 minutes it takes to bake two large sweet potatoes. So, I diced the sweet potatoes and roasted them for about 25 minutes. Then, I added the roasted sweet potatoes to the frittata like normal.
The only difference was the color, which kept it’s eggy-yellow hue instead of becoming deep orange from the sweet potatoes. There was still sweet potato in every bite and the flavor was still a phenomenal balance of sweet and savory.
So, for this sweet potato frittata recipe I’ll give you the instructions for both ways of making it. You get to decide which one works better for you.
No matter which way I cook the sweet potatoes for this recipe I can make two thin, casserole-dish sized frittatas (13X9 casserole dish) OR two, thick pie-dish sized frittatas (8- or 9-inch pie dish
).
This recipe feeds the whole family for dinner with leftovers for lunch the next day. The boys love it and I love that it’s filling and super-healthy.
Sweet Potato, Goat Cheese, and Spinach Frittata Recipe
Ingredients
12 eggs
2 large sweet potatoes
2-4 oz goat cheese, crumbled (I love goat cheese, so I use four ounces. If you don’t like goat cheese as much, use only two ounces.)
10 oz fresh or frozen spinach
2 tsp real salt
1 small onion, diced or 2 tsp onion powder
2 Tbs olive oil, avocado oil
, or butter
2 tsp coconut sugar (optional, but delicious)
3 Tbs butter, melted
Instructions
First prepare the sweet potatoes
For baked, mashed sweet potatoes
Preheat the oven to 425 degrees.
Prick the sweet potatoes with a fork to allow steam to be released while baking.
Cook for 40-50 minutes, or until soft.
Set aside to cool.
Once cooled, remove baked sweet potatoes from skins and mash the potatoes with a fork. (They won’t be smooth and that’s okay.)
For diced, roasted sweet potatoes
Preheat the oven to 425 degrees.
Peel and dice the sweet potatoes.
Place them on a baking sheet lined with a silicon baking mat
(or coat a baking pan with avocado oil).
Bake for 25-30 minutes
While the sweet potatoes bake or roast, prepare the spinach.
Fresh or frozen spinach
Add the 2Tbs of oil or butter to a skillet and saute the spinach until it’s heated through (for frozen) or wilted completely (for fresh).
Once the sweet potatoes and spinach are ready, follow the next steps to prepare and bake the frittata.
Preheat oven to 400 degrees.
Crack eggs into a large bowl and whisk them together.
Add all ingredients (including the spinach) except the sweet potatoes and whisk to combine.
Add the sweet potatoes to the egg mixture and stir gently with wooden spoon to combine.
To Bake the Sweet Potato Frittata
For a thinner frittata
Pour frittata mixture into two 13 X 9 baking dishes
Bake for 30 minutes or until middle is set.
For a thicker frittata
Pour frittata mixture into two 9-inch pie dishes.
Bake for 35-40 minutes
