Preheat a griddle to medium heat.
Skewer 5 shrimp per skewer stick.
Place the skewered shrimp in a 13X9 baking dish.
Combine the coconut oil, lime juice, honey and salt.
Pour over the shrimp, moving the skewers around to ensure that each one is coated with the mixture.
Let the shrimp marinate for about 15 minutes.
Grill the shrimp on the griddle for about 5 minutes per side, or until the shrimp has turned white and firmed up.
