Coconut Lime Shrimp


  • 10-12 skewer sticks
  • 2 lbs of large 25-30 shrimp (uncooked)
  • 1/3 cup coconut oil
  • 1/3 cup lime juice
  • 1/8 cup honey
  • 1 tsp salt


  • Preheat a griddle to medium heat.
  • Skewer 5 shrimp per skewer stick.
  • Place the skewered shrimp in a 13X9 baking dish.
  • Combine the coconut oil, lime juice, honey and salt.
  • Pour over the shrimp, moving the skewers around to ensure that each one is coated with the mixture.
  • Let the shrimp marinate for about 15 minutes.
  • Grill the shrimp on the griddle for about 5 minutes per side, or until the shrimp has turned white and firmed up.
