Eggplant Mini Pizzas


  • 2 large eggplants
  • 16 oz of shredded mozzarella cheese
  • 1 1/2 cups of pizza sauce or marinara sauce
  • Desired toppings we use pepperoni most often, but all usual pizza toppings will work.


  • Preheat the oven to 400 degrees.
  • Slice the ends off of the eggplants.
  • Slice the eggplants into 1/2 inch thick rounds.
  • Place eggplant rounds on a baking sheet.
  • Top with sauce, toppings and cheese.
  • Cook for 15-18 minutes, or until cheese is bubbly.
